Choe stands slightly stooped but moves with a surprising alacrity, wiry muscle visible beneath sun-leathered skin. Fine dust from decades of flour-making accentuates the deep webbing of laugh-lines about his eyes and mouth. His head is shaved bald except for a proud, long, ink-black topknot tied high. His hands are broad, thick-fingered and always in motion, whether kneading dough, whittling, or fidgeting nervously. Despite his years, his eyes gleam with youthful mischief, and his smile bares a single, pristine gold tooth. He smells faintly of rye and wind.
